Congee is a nourishing thin porridge. It is especially beneficial when you are ill or recovering from illness and do not have much of an appetite. Congee is also supporting of our digestion if you are suffering from food sensitivities, bloating and pain. This particular congee supports the digestive system and can be modified by adding other vegetables, sliced shiitake mushrooms or small bits of animal protein, or simplified by cooking just the rice and broth.
1 cup organic brown or white basmati rice
4-5 cups Immune or Chicken Bone Broth, or vegetable or chicken stock
1/4 cup chopped fennel
1 carrot, chopped or sliced
1. Place water, vegetables and rice in a rice cooker or slow cooker.
2. Cook for 4-6 hours on the lowest temperature possible, adding water to maintain a soup-like consistency.
